The Middle East is comprised of at least 16 countries that border the Mediterranean Sea, including France, Spain, Italy, Greece, Turkey, Libya, Egypt, Tunisia, Israel and Morocco. There are as many varied sauces in Middle East cuisine as there are countries. Tahini is an ancient sauce made from sesame paste and used in Greece, Israel and Arab countries. Sriracha is a traditional Thai sauce; Hummus is a common Middle East sauce made from chick peas; Harissa is a hot red pepper paste used in North African cuisine; and toum is a traditional Lebanese sauce, to name just a few.
